La Haciendita’s coffee cultivars are completely shade-grown, with sustainable practices in place for growing and harvesting. The farm is nestled high in the mountain range of Tecapa-Chinameca, between two ridge tops and surrounded by stunning views. We purchase this coffee through Christina and Diego at Specialty Beans, who are the daughter and son-in-law of Maria Llach and reside in BC, Canada.\u003c\/div\u003e\n\u003cdiv\u003e\u003cbr\u003e\u003c\/div\u003e\n\u003cdiv\u003ePacamara is a hybrid of Pacas and Maragogipe and is prized for its high quality and complex flavour. This naturally processed Pacamara is a great example of that. It is harvested when ripe, then rested in ‘pilas’, or large tubs, for 18 hours before drying in cherry.
