Stiven is a young and driven coffee producer, treating his crop with the up-most care. The coffee cherries are picked every 15 days to ensure only the ripe ones are picked. Left to ferment, depulped and submerged in water for 32 hours prior to being fully washed. After which, they are dried over a 20 day period. Stiven is part of the incredible Monkaaba group, a group of smallholder coffee growers who are lead by Esnaider Ortega Gomez. The initiative of this group is to support and train smallholder growers and to help gain them access to the specialty coffee market so they can get a better price for their hard work.
