This lively coffee underwent a 96 hour anaerobic fermentation before being naturally dried inside the cherry. Acauã (the coffee cherry variety) is the result of cross-breeding between Mundo Novo, Sarchimor and Catuai. It makes a beautiful bright cup with a juicy acidity and lovely tropical fruit notes.
